"Kyunki Saas Bhi Kabhi Bahu Thi" - MIL's Sweet Dish

Hi..
"MOTHERS-IN-LAW" yes its a very scary term for most people.. Maybe because we picture her just like Meryl Streep in  'The Devil Wears Prada'..

Well after nine years of marriage I have realised she's just like any other Mum - Caring, Loving, Protective.. And wants to be treated in a similar way.. Yes me my MIL share a great rapport..Maybe because she has known me since birth..or maybe because of the way we treat each other..Yes we have our share of differences too (which I am sure we have with our Mums too), but if we keep an open mind and communicate, she might just be your best friend!!!

And yes like all Moms..She is a marvellous cook....This time since we all were craving for an Indian sweet...she rushes into the kitchen and makes this delectable Bengali Mithai in a jiffy, Just like a Boss!!! Its called "ELO-JHELO" and it means something like Carefully Careless (As you can see I am not that great with translations hehe)


ELO JHELO - BENGALI FRIED SWEET


Elo-Jhelo : Bengali Fried Sweet

Makes: Around 25-27 pieces

Slits

Ingredients:

All-purpose Flour / Maida - 2 and 1/2 Cups
Sugar - 1 and 3/4 cups
Oil - 4 tablespoons + for deep frying
Water



Procedure

1. Mix the Flour/Maida and Oil (4 Tbsp) with your hands for around 3-4 minutes so that the entire oil is well incorporated in the Maida.
2. Add Water ( little at a time) and make a smooth tight dough. You will have to knead for atleast 10minutes.



3. Cover and Keep the dough for 30 minutes.

4. In a saucepan Mix the Sugar(1 and 3/4 Cup) and Water (1/2cup) and place it over the heat. Keep boiling it till it reaches a "TWO THREAD CONSISTENCY"..To Know more about the consistency Click  Here .
5. Divide the dough into 25-27 portions.
6. Roll out each portion (like you do for a Puri)
7. Make slits on it (check picture) but not till both ends , the ends should remain intact.
8. Now Roll the Puri just like a Pin-Wheel and press the sides.



9. Heat Oil (sufficient for deep frying) on (Medium heat).
10. Drop each piece and fry till Golden Brown.
11. Immediately after removing from the fryer,  drop each one into the syrup. Keep turning in the syrup for around 3-4 minutes.

12. After removing them from the syrup place it over a strainer so that the extra syrup sheds off (for around 5 minutes)


13. Place on a plate and let it rest for 30 minutes before serving (so that the sugar syrup hardens).

Note: This can be kept unrefrigerated for around a month. 

I hope someday I will also learn and cook as well as my MIL but till then let me enjoy the Mishti..Ciao Ciao!!
